Information and Usage:

Shallots were unknown in ancient times and their origins are unknown, however, many think that that may have been a cross between garlic and onions. Shallots are widely used in France. They are gray, pink and golden-brown in color and are available in summer through autumn. Shallots are used primarily in sauces and marinades.
