Usage:

Also known as Nga choy. Bean sprouts are the sprouted legume-mung bean. This is a small oval olive green bean found in Asian countries. It is highly nutritious, and is used to give extra crunch to stir fried foods, and salads. Bean sprouts are grown in large tubs or flats, and are soaked and sprouted in a dark environment. They take approximately 3 to 5 days to get to market size. The sprouts have pale yellow heads with a silvery  2 inch stem trailing a root thread.

When buying bean sprouts, look for crisp white stems, no browning or limpness. Only buy what is needed as they are quite fragile.
