Belgian Endive (Cichorium endivia)

Imported from Belgium and grown in California

Peak Season:


Peak season is September through May although available year round.

   

Usage:

Belgian Endive is a strong and slightly bitter member of the chicory family. It was originally grown in Belgium and is used as a refreshing salad green. It is grown in a unique way. The plants are grown in the dark by a technique called blanching. The shoots are kept covered to avoid the green chlorophyll pigment. This insures a slightly sweet and delicate end result. The Belgian Endive is 3 to 6 inches in length, slightly pointed and is very good for use as a scoop for dips, lends itself to stuffing and can be braised and served with a light vinaigrette.
