Tamarind, the sweet and sour fruit of the tamarind tree, is native to Asia and
northern Africa and is also grown in the Caribbean. Similar
to lemon, in that it is somewhat acidic, tamarind lends a tart
note to food. Tamarind, along with other ingredients gives Worcestershire sauce
its zip. Tamarind seeds
are roasted and used as flavoring. In parts of East Africa,
Indonesia and the Caribbean, tamarind is the base of refreshing iced drinks and
sweet sauces.
It is also used in marinades for meat and poultry. Tamarind is
sold as a sticky paste in a jar, or a bar of pressed pulp with
or without seeds, or as a bottled extract.
