My first experience with a Quince was one of shock and
dismay. My neighbor had what I thought was an apple tree...now
to a 10 year old, this was way too tempting for me. I took one
green "apple" and took a big bite out of it...yeeoooo!
I discovered what a Quince really tastes like raw...
Quinces are an Asiatic fruit which is one of the earliest
fruits used by humans. There are many varieties of this fruit,
all cooked before eating as these fruits have a high acid
flavor profile and are loaded with pectin. It is used
principally in preserves and baking and turns pink when
cooked. Japonicas are the flowering variety of Quince but have
less of a flavor.
Quince are very nutritious and worth the effort to cook as
they develop a nice sweet flavor after cooking. They have lots
of potassium and are only 57 calories for a 3 1/2 ounce
serving.
