In Chinese cookery Litchi is often served with meat or fish. But the fleshy fruit also enhances a lot of salads. Shelled Litchis served with vanilla ice cream is an easy dessert. A good source of vitamin C and phosphorus, Litchis are excellent eaten fresh or sun-dried as "Lychee nuts".
